These Cauliflower Quinoa Pizza Bites are the perfect solution: veggie-loaded, protein-rich, and totally customizable. Combining cauliflower, quinoa, breadcrumbs, and cheese, they bake up golden and crispy and taste like mini pizza bites—but without the dough! Ideal for snack time, lunch boxes, or crowd-pleasing appetizers.
Instructions

Sauté the Onion
Heat the olive oil in a pan over medium heat. Sauté the diced onion until translucent and lightly golden. -
Combine the Base
In a large bowl, mix together the cooked cauliflower, quinoa, breadcrumbs, mozzarella, eggs, sautéed onion, sea salt, garlic powder, oregano, and basil. Mash gently to ensure everything holds together. -
Form & Cook the Bites
Preheat your oven—or air fryer—to 400 °F (205 °C). Line a baking sheet with parchment paper. Scoop the mixture into ~24 small patties, brush each with olive oil, and arrange on the tray. -
Bake or Air Fry
Bake (or air fry) for 15–20 minutes, until the exterior is golden and lightly crispy. -
Make into Mini Pizzas
Spread marinara on top of the cauli-quinoa bite then sprinkle with shredded mozzarella. Broil until the cheese is melted + golden brown.
