Looking for a vegetarian comfort meal that's quick, flavorful, and satisfying? This Instant Pot Vegetarian Chili Mac is just what you need. With tender cavatappi pasta, a medley of warm spices, hearty beans, and a rich, dreamy cheese topping, it delivers big chili flavor with minimal effort. Perfect for busy weeknights, cozy dinners, or feeding a crowd, this vegetarian meal is easy to love and even easier to make.

Instructions

  1. Sauté the Flavor Base
Set your Instant Pot to Sauté. Once hot, add olive oil and diced onion, cooking briefly until fragrant—about 1 minute. Add garlic and sauté for another 30 seconds.
  2. Build the Chili Mac
Stir in cumin, smoked paprika, mustard powder, chipotle chili powder, and herbed sea salt. Saute spices for about a minute. Pour in diced tomatoes, tomato sauce, drained beans, and vegetable broth. Add the pasta last, gently stirring to submerge it.
  3. Pressure Cook & Release Fast
Seal the lid and pressure cook on High for 5 minutes. As soon as the cooking cycle ends, immediately release the steam to prevent overcooking.
  4. Stir in the Cheese
Open the lid and sprinkle in the grated cheddar. Stir until melted, creamy, and completely combined.
  5. Serve Immediately
Ladle into bowls while hot and cheesy—this dish is best enjoyed straight from the pot!

Why It Works

  • One-pot simplicity: Instant Pot does the cooking, with minimal cleanup.
  • Balanced flavors: Smoky spices, savory tomato, and creamy cheddar make every bite comforting.
  • Feeding a crowd?—Scales easily for extra servings.

Storage Instructions

  • Refrigerator: Store leftovers in an airtight container for up to 4 days. Reheat gently on the stovetop or in the microwave—add a splash of broth if it seems thick.
  • Freezer: Not recommended—cheesy pasta textures may separate when thawed.
  • Best Fresh: Serve right away while it’s hot and melty.

Tips & Variations

  • Try swapping cheddar for a smoky gouda or a dairy-free cheese if you want a lighter version.
  • Want extra protein? Swap veggie broth for bone broth or keep it vegetarian by adding in some chickpeas!
  • Prefer spice? Add a pinch of chili powder or hot sauce when servings
