Sauté the Flavor Base
Set your Instant Pot to Sauté. Once hot, add olive oil and diced onion, cooking briefly until fragrant—about 1 minute. Add garlic and sauté for another 30 seconds. -
Build the Chili Mac
Stir in cumin, smoked paprika, mustard powder, chipotle chili powder, and herbed sea salt. Saute spices for about a minute. Pour in diced tomatoes, tomato sauce, drained beans, and vegetable broth. Add the pasta last, gently stirring to submerge it. -
Pressure Cook & Release Fast
Seal the lid and pressure cook on High for 5 minutes. As soon as the cooking cycle ends, immediately release the steam to prevent overcooking. -
Stir in the Cheese
Open the lid and sprinkle in the grated cheddar. Stir until melted, creamy, and completely combined. -
Serve Immediately
