HOMEMADE HONEY LAVENDER TEA AND COFFEE SYRUP

INGREDIENTS

  • 1 cup water
  • ½ cup honey
  • ½ cup sugar
  • 1–2 tsp dried culinary lavender (start with 1 tsp if you prefer subtle floral notes)
  • 1 tsp vanilla extract (optional, adds depth)
  • Pinch of salt

A calming, floral, golden syrup that turns any tea, latte, or mocktail into a cozy moment of pure softness.

If you’ve ever wanted to bottle the feeling of a slow, quiet evening..this is it. Honey Lavender Syrup is floral, calming, and gently sweet with that unmistakable cozy glow only real honey brings. It’s the perfect syrup for nighttime teas, London fog–style drinks, milk teas, or even a simple sparkling water when you need something soft and grounding.

Lavender adds a whisper of floral fragrance (never perfumey IMO), while honey adds richness and warmth. Together, they create the ultimate comfort-syrup that is soothing, pretty, and endlessly versatile.

NOTE: I tried to add in butterfly pea flower tea & some blue dye to get a pretty lavender colour but it FAILED. Just accept it's gonna be a bit of a brownish honey color haha... my attempts to make her *pretty* made her lowkeyy look like motor oil..which... is worse. okay? ok. its delish nonetheless.


Instructions
  1. Add water, sugar, honey, lavender, and salt to a small pot.

  2. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.

  3. Reduce heat and let the mixture steep for 5–7 minutes — taste as you go to avoid overpowering lavender.

  4. Remove from heat and stir in vanilla extract.

  5. Let the syrup cool for 10 minutes.

  6. Strain through a fine mesh sieve to remove the lavender buds.

  7. Store in a jar in the fridge for up to 2 weeks.

It’s delicate without being soapy, sweet without being heavy, and absolutely gorgeous in any milk-based drink. I absolutely adore the flavor of lavender, but know it is quite divisive. SO if you do not like floral notes in your bevvvy's I DO NOT reccommend hahah 


How to Use It
  • Add 1–2 tbsp into chamomile, Earl Grey, or rooibos tea

  • Stir into hot milk or oat milk for a lavender-steamed milk

  • Add to iced lattes for a floral twist

  • Drizzle into sparkling water with lemon

  • Use in mocktails with gin-style botanicals or lemonade

  • Add to your bedtime tea ritual for a soothing wind-down moment


Tips & Variations
  • ALWAYS us culinary-grade lavender.

  • For a deeper floral flavor, steep an extra 2 minutes (but taste-test frequently).

  • Add a strip of lemon peel for brightness.

  • Swap vanilla for almond extract for a softer, bakery-like aroma.

  • If you want it thicker, simmer an extra 3–5 minutes.
