INSTRUCTIONS

Sauté & Season: Set your Instant Pot to Sauté mode. Heat the olive oil and add the diced onion, cooking for about 2 minutes until it starts to soften. Stir in garlic, tomato paste, Italian seasoning, smoked paprika, chili flakes, and Herbamare (or substitute with ½ tsp salt). Continue sautéing for another 2 minutes to deepen the flavors

Pressure Cook the Base: Add the rinsed lentils, diced tomatoes, spinach &/or zucchini, and veggie broth to the pot. Cancel Sauté mode, secure the lid, and seal the steam valve. Set to Pressure Cook on high for 10 minutes.

Blend & Finish: Once cooking is done, carefully release the pressure via the steam valve and open the lid. Stir in the cream, then blend until silky smooth. Serve warm and savor every comforting spoonful.
